Rehearsal Dinner

Did someone say “rehearsal dinner”?

Anyone who knows me knows how much I love to cook and feed people, so when my son asked me if we would like to do the rehearsal dinner for his upcoming wedding here on Orcas, I jumped at the chance! He reminded me that this was not going to be a traditional wedding. Good, I said because this was not going to be a traditional rehearsal dinner.  My invites read something like this- “Welcome to Orcas………Island Style. We begin with a bonfire; add good food, family and friends. What to Bring: warm clothes/outdoor shoes”. Then I reminded my son to inform our guests of the weather here at the end March!

Next…menu planning. Welcoming guests to Orcas for the first time or anytime is meaningful to me and has to include as much of what we offer here as possible.

I called Becca Gray, Island Hoppin Beer, www.islandhoppinbrewery.com  and ordered up one of their hoppy beers. My son and his bride live in Portland where IPA’s are very popular. City brewing has nothing over Orcas brewing!

Next I contacted Rick Hughes, Ray’s Pharmacy (more than your mainland Rite Aid) and ordered wine. Jay gave me an organic red for Christmas that seemed to swallow easily, Green Truck, www.classicwinesofcalifornia.com/585winepartners/redtruck.htm .  Rick recommended a white also and the beverages were checked off the list!

A call to my favorite oyster business, Judd Cove Oysters, check them out at www.oysterguide.com/maps/northern-puget-sound/juddcove.  Bill and Char were more than happy to provide me with more than enough to satisfy any “crassostrea gigas”  craving. Add some garlic butter and parmesan and we may need to leave more time to rest our tummy before the main dish is served.

My last order was placed with Troller Point Fisheries, Troller@alaska.net .  Mark and Diana Hoffman, Orcas locals, who have found their passion in fishing. The Kings are on their way as I write.Salmon Recipe:

Place 1 large bay leaf on a square piece of parchment paper. Top with thick slice of

beefsteak tomato; add several slices of red onion. Place room temperature piece of salmon (one portion) on top of the pile. Mix 2

Tbsp of mayonnaise and tsp of dill together and spread on top of salmon. Fold and close up the parchment paper. Place package on a cookie sheet and place in a 300 degree oven. Depending on thickness of the fish, bake 20-25 minutes, just until fish is turned color and flakes apart. Do not over cook. Remove from oven and let sit for 5 minutes. The fish will continue to cook in the parchment pouch. Serve the pouch next to a Caesar salad. Lay several spears of cooked asparagus on top.

Backyard Hens

I have wanted my own flock for some time now. Jay kept saying he does not want to get into the chicken business (he knows who will end up tending MY chickens, and his name starts with J!). Thank goodness for grown sons. My eldest, Eric, homesteads at the south end of our 4 acres and shares my desire to feed myself through farming. Before I knew it a coop went up and the word was out that we were looking for chickens. It is amazing what this island community will provide, you just have to ask. Great friends on Lopez had an extra hen, a Golden Laced Wyandotte, she’s a beauty!. Within 5 days of coop construction, Eric had collected 5 hens with more promised as they hatched. We are in the egg business. I have a feeling, if this pace keeps up, I will be blogging egg recipes and asking for your favorite way to prepare eggs! 

One of my favorite magazines, Organic Gardening, had a section on chickens (June/July 2010) naming pros and cons and discussing best backyard breeds, www.orgaincgardening.com.

Now I am finding chicken information everywhere. Island Hardware www.islandhardware.com  had a stack of 2012 WSDA Calendars- Birds of Washington, chock full of tips, dos and don’ts for a healthy flock. The WSU Avian Health & Food Safety Laboratory will conduct diagnostic testing for backyard poultry that die. Third Annual Heritage Seed and Plant Exchange

Feb. 2012 Westsound Seed Exchange. Includes anyone with extra seeds/plants/bulbs/tubers to share; anyone who wants to come and learn about seed saving and wants to acquire seeds and knowledge; anyone with knowledge or interest in seed saving.

The set-up: the Westsound Yacht Club was filled with tables covered with packets and jars of seeds. There were few rules explained at the beginning of the event. I believe “no elbowing thy neighbor” was one unspoken rule.  Was just thinking I may need to do this due to the way people were hovering over the tables they were going to work over first. It ended up very civilized and all went home with all the seeds they can manage for this season. Two rules: take only the amount of seeds you need for the coming grow season, and bring back seeds to share and exchange next year.

The tables were arranged by ease of growing. Seeds for beginners: radishes, pole beans and kale. Seeds for green thumbs: tomatoes, carrots and corn. I collected from all tables and collected several local seeds- Doe Bay Resort Garden, Bond Brothers Garden, Orcas Parsnips-5thgeneration.

This event was sponsored by Baker Creek Heirloom Seed Company, Southern Exposure Seed Exchange and Seed Saver Exchange. Excess seeds are donated to the school’s garden and the food bank.

Kudos to our Power Company

Thank you OPALCO for always being there. Rain, sleet or snow our linemen are out making sure we stay safe, warm and see the light!

Outages here in the islands are not always because we live on an “island” but can be caused by mainland accidents or downed trees in areas that feed the underwater cables that are the power source for the islands.

Snow storms are not common but can also cause an outage. January’s ice and snow storm had the lower mainland in pretty bad shape with 100,000 plus residences facing outages, leaving people stranded in the cold without heat. Orcas saw two power outages that were relatively easy and quick to fix. Our lineman crew is the best, comprised of local boys who have been here most of their lives. They are experienced in being the person sitting in the dark wondering what caused the lights to go out, and asking “should we be cranking up the generator”? And they know most of these community members left in the dark!!  These guys have back up from OPALCO office crew who are working just as hard making sure the crew has hot coffee and food should the weather remain a hazard and it look like it will be an all night date.

Personally, I look forward to outages. I get an opportunity to just sit in front of the fire with a good book, put a pot of soup on the wood stove, find the candles and hunker down.   This time, it was the snow that helped put me in the rocking chair instead of a power outage. Islanders are just equipped and look forward to anything Mother Nature throws at us.

Yummy Winter Greens Salad

We’ve had such a mild start to our fall/winter season it has left many of us cleaning the garden in late November early December. I love the clean up and putting the beds to rest for the winter just as much as I enjoy the planting in the spring. The planning of the next season’s bounty is always in my head any time of the year.

Brussel sprouts from Teri Williams garden on Orcas IslandI love Brussels sprouts and had a large crop, almost by accident last year. This year I planted many starts, thinned and spread them throughout my raised beds and dreamed of roasted gems for Thanksgiving.  Well you can see here my harvest included a hand full of pea-size sprouts. Most plants had no signs of little cabbage heads popping out. What a disappointment, but I decided to cherish the one meal I would have. I sautéed these little guys in olive oil, garlic, salt and pepper and topped a bowl of quinoa with them-yum. I wish I had a bag full of thee sweet garden treats and I’ll be picking next year’s crop while they are still young. Always optimistic about the next years bounty!

Here is one of my favorite winter salads that includes Brussels sprouts. Enjoy 🙂

Winter Greens Salad with Sunflower Seed

 1/3 c. raw sunflower seeds

1 Tbsp whole grain mustard

Brussel sprout salad by Teri Williams on Orcas Island3Tbsp fresh lemon juice (1 large lemon)

¾ tsp salt

1 Tbsp pure maple syrup

2 tsp sunflower oil (can use a good olive oil)

½ pound Brussels sprouts (can be raw or sauté for a minute to soften crunch)

4-6 leaves of leafy greens such as Swiss chard, baby spinach, kale

(I’ve also added finely chopped broccoli and/or chopped apple)

  1. Preheat oven to 375. Toast sunflower seeds (careful, this is usually where I burn somethingJ). Set aside to cool. Meanwhile stir mustard, lemon juice, salt and maple syrup together in a small bowl; whisk in oil until emulsified.
  2. Thinly slice Brussels sprouts and leafy greens, toss together, add seeds and pour in dressing; toss to coat. Serve immediately.

Serves 4; total time 15 minutes.

You can play with maple syrup, salt and lemon juice to find your taste. If you add apples, they will add sweetness. I’ve also added other favorite seeds.

Homemade Gifts – Island Style

I was really looking forward to this year’s homemade gifts. Every year I try to create a gift that will be unique and meaningful to the receiver. Not always an easy task! The benefit for me, besides the joy of giving, is having my thoughts go to the person. I recall memories, shared times together, likes, dislikes and the energy that person gives from their heart.

This year I tried a few new gift ideas:

Hand-painted Mailbox by Teri Williams

Creating designs for communication boxes, formerly known as mail boxes. I believe these inexpensive Home Depot purchases can be used inside the home and can deliver all kinds of messages.

 

Cross-stitch Pillow

Cross-stitch a “teri” designed pillow. This is the reason I needed a new eyeglass prescription! I added second-hand store beads for a little more color and texture.

 

 

Moccasins made by Teri Williams

Martha Stewart design of moccasins. Martha’s design used felt. I wanted something a bit sturdier and found fur lined suede for my toe warming gift.

And lastly, one of my favorites, home canned goods. I spent an evening with close friends in Bellingham. I brought them a box of canned goodies: tuna, salsa, apple pie filling, apple butter and pepper jelly. Well received!

I love Halloween on Orcas. After all the activity that takes place during the summer, Halloween reminds us we don’t have to wait for the holidays to celebrate and get dressed up!!

In true Orcas style, the community pulls together a successful event in Eastsound each year. Starting mid-afternoon, village businesses pass out treats to costumed kids of all sizes and styles.It might seem early in the day for goblins and ghouls, but it gives us empty-nesters a chance to gaze out the office window and remember when we too paraded down the sidewalks with tiny tots in tow.

This year the Orcas Historical Museum is doing something different: a re-enactment of the story of the Olga Bear, circa 1910. Orcas Center is lending costumes and community members will learn a few lines and become characters for one afternoon. Some of us are already characters!

Jay and I volunteered to make caramel apples for the museum event. I haven’t done this since my kids were young. I love caramel apples. We’ll see how many make it to the museum. ;0

Spice It Up with Homemade Red Pepper Jelly

Red peppersOne of the simple pleasures of fall is canning the summer’s bounty — especially when you invite a girlfriend over to can along with you. Last week a friend and I had fun making Red Pepper Jelly — a recipe idea from Pacific Northwest: The Beautiful Cookbook by Kathy Casey

This versatile pepper jelly is a “must have” for your pantry. It’ll spice up an impromptu “happy hour”, add pizzazz to your Sunday Brunch or put a new twist on the same old entree (see chicken idea below.)

Christina Bollinger, import from Lopez, family friend, blogger and connoisseur of fine food helped me can jelly.

Red Pepper Jelly

3 large red peppers, cored and seeded.

3 fresh Serrano (small hot red) chili peppers. Cored and seeded.

¾ cup white vinegar.

3 oz. (1 box powder) of liquid pectin.

3 ½ cup white sugar.

Cut the peppers and chilies into rough cut chunks and puree’ in a blender (approx 2 cups). Add vinegar, sugar and pectin and bring to a hard boil. Boil 20 minutes stirring constantly. Pour into 4 oz jam jars. Process 10 minutes in a water bath (cover jars with water 2” above jars and bring to boil before you start the clock.)

Serve with cheese and crackers. red pepper jelly

OR

Serve with sour cream as a side to scrambled eggs.

OR

Baked Chicken with Red Pepper Jelly
I got this idea from watching an Emeril Lagasse cooking show. Didn’t write recipe down, but remembered the gist of the dish.

Place chicken thighs and legs on a baking pan. Cut apple into 4 pieces (with skin), cut large chunks of yellow onion, and add both to baking pan. Dump jar of red pepper jelly on top of all ingredients and stir to coat all. May take 2 jars depending on size of your pan and amount of ingredients. Bake at 350 for 40 minutes, or until chicken is done and apples and onions are to desired doneness. Serve with a green salad and rice.

Part Two: My Perfect Birthday Weekend – Boating in the San Juan Islands

Birthday whales! What more could you ask for?

…I looked at the mouth of Friday Harbor to the north and saw a whale jump! I could hardly believe my eyes when the pod of resident orcas started towards us. A few swam to the west of Turn Island but soon came back and headed past our boat toward the deeper waters of the channel. The activity unfolding in front of our eyes took my breath away. If you’ve not witnessed these graceful animals frolic in the water you really need to put it on your bucket (or birthday) list! I told Jay these were birthday whales and a gift I’ll never forget.

A perfect ending to a perfect day...Life is good.

After the show, we crossed the channel to the protected waters of Shaw Island’s Parks Bay, one of my top spots for viewing the sunset. It has good bottom for anchoring and is surrounded by undeveloped land owned by UW. Although you can’t go ashore, a row around the bay is a treat. You might see raccoons harvesting oysters  or a blue heron patiently fishing in the shallows.

Sleep comes easy after a day on the water. Sunday morning we awoke refreshed enjoyed a leisurely breakfast – meals always taste better on a boat! We reviewed the currents and charted our course for motoring back to our slip at Bay Head. I like to head back early before the waves get sloppy and boat traffic heavy.

My birthday weekend was filled with love, laughter, good food, nature’s gifts and boating. I can’t imagine a better way to celebrate another year of life in the San Juan Islands!

Part One: My Perfect Birthday Weekend – Boating in the San Juan Islands

As the cooler weather creeps in, I like to assemble my favorite memories of the summer to keep me warm throughout fall and winter. Topping the list this year was my birthday weekend in late August.

I can feel the warmth all over again when I look back at this blissful picture! My first gift was perfect weather.

It started with my husband and I sailing to Deer Harbor Marina where four of my closest friends had prepared a dockside dinner. They treated us with fresh crab, marinated local prawns, melt-in-your-mouth corn on the cob, chocolate cake from Roses Bakery and lotsa good wine. The weather was ideal for a night on the dock, and visiting boaters were friendly all around us.

Saturday morning Jay and I headed out to sail San Juan Channel between Orcas and San Juan Island. While cruising past Yellow Island we spotted smoke and called 911. We were relieved to find out this was an annual controlled burn by the Nature Conservancy to keep the undergrowth from encroaching on the grasslands – a practice first used by Native Americans to protect camas bulbs and other food crops.

We continued out into the channel pushed by favorable warm wind. We were on the same path as the historic Adventuress and mirrored her course while feeling the pirate in our souls-arrrgh…. Only to be left behind with a few practiced tacks by the large crew aboard her deck.

Midday we headed south to hook one of the buoys located on the north side of Turn Island. The entire island is a state park with nice easy trails, camp sites, and several sandy beaches on the west side- yes I said sand!  I had just settled in with refreshment in hand, taking in the warm sea air and thinking ‘this is a great birthday’ when all of a sudden…    (To Be Continued in Part Two!)
